Quinoa, arugula and pumpkin salad

I have already told you several times that we have many pumpkins, and every time I see a recipe that takes it among its ingredients I keep it. I had never tasted it in a salad, but I liked it a lot, although my son says "that ingredient does not hit it". The truth is that we ate it I will repeat it again. Since I discovered quinoa, I use it a lot, and in salad it is great, it also has many nutritional properties.

Quinoa, arugula and pumpkin salad

150 grs. of quinoa
150 grs. pumpkin cubes
50 grs.de arugula

For seasoning:
1 spoonful of old-style mustard
1 spoonful of olive oil
Juice of half a lemon
1 teaspoon of salt
A bit of ground black pepper
2 tablespoons of soy sauce
1 teaspoon of honey

We cook the quinoa in 2 cups of water for about 15-20 minutes We let temper.
Boil pumpkin cubes in water for 15 minutes or until they can be pierced with a fork. We drain and brown a little in a pan with a little olive oil. We reserve.
Once cold or warm the quinoa and pumpkin we put them in a bowl together with the arugula well washed.
Mix all the ingredients of the dressing well and pour over the quinoa, arugula and pumpkin that we will have prepared in the bowl. We mix and we have a salad very rich.
